All the Charcoal that goes through our oven is Sustainable Lump wood charcoal for the distinctive New Zealand flavor. All our Beef & Lamb Comes from Awhi (Awhi means to Embrace and Nurture and Support) Farms near Ohakune where it is sustainably farmed, grass fed & free Range. The Ruapehu Angus Cattle are Animal traceable meeting our paddock to plate philosophy. Our Lamb come from Romney & Perendale Ewes for their Superior taste & Quality. The result is a succulent Lamb of unparalleled quality and Taste sought after by customers home and abroad. Our Pork is Indoor farmed as gives the best care for the Animals by allowing the farmer to carefully manage their environment. Our chicken Is free range from Turks Chicken from in Horowhenua, New Zealand. Raised with the 5 freedoms of Animal welfare, Freedom from Hunger, Thirst or Discomfort, Pain or injury, freedom to express normal behavior, freedom from fear or distress.
